We import our matcha straight from Japan, blend in small batches, and rotate inventory to ensure the matcha is as fresh as possible. Once opened, we suggest consuming our matcha within a month. You can also store the matcha in the fridge to help slow the oxidation proccess.
If your matcha is bitter, make sure you are using water temperatures at or below 175 F. Matcha is very delicate, and water that is too hot may turn it bitter. If you are having an issue with clumping, we recommend sifting the matcha before use and using a bamboo whisk for best results.
